Spicy Green beans

ingredients

 

  1. Fresh green beans - 1 1/2 lbs.
  2. Cumin - 1/2 tsp.
  3. Urad dhal - 1 tbsp.
  4. Mustard seeds - 1/2 tsp.
  5. Dried red chillies - 2.
  6. Oil - 1 tbsp.
  7. Salt - as required. 

 
method
  • Wash and cut green beans into 1/4 inch pieces.
  • Heat oil in a wide pan.
  • Add Mustard seeds and Cumin. If the oil is hot enough the some of the seeds will burst open. If not, the oil has to be hotter.
  • Add Urad dhal and stir fry for about 10 seconds until the dhal is a light brown. 
  • Break red chillies into halves and add to the spices in the oil.
  • Now add the cut beans to the pan. Cover and cook until tender. Stir every couple of minutes so the beans cook evenly and does not burn in the bottom.
  • Add salt.
  • Stir and continue to cook for another minute.
  • Serve hot with rice.
