- Soak noodles in very hot water for 30 minutes.
- Meanwhile, cut all vegetables into thin strips so they cook faster.
- Heat oil in a wok or wide pan, add the cut garlic and stir fry for a few seconds.
- Add all the cut veggies and continue to stir fry for a few minutes.
- Stir in the red curry paste and salt and mix well.
- Add the Noodles, toss well and cook for about 5 to 7 minutes.
- Garnish with cilantro and serve hot.
