- Heat clarified butter and fry the nuts and raisins lightly and set aside.
- Wash and cook brown basmati rice according to package directions.
- In a heavy wide pan, heat oil and stir fry the ginger-garlic paste, cumin seeds, cardamom, cloves and bay leaf.
- Add all the veggies, cover and cook until the veggies are tender, stirring occasionally to prevent it from burning on the bottom.
- Add salt.
- Stir in the brown rice and mix well.
- Garnish with the raisins and nuts.
